Soup Month Recipes 

The month of January is National Soup Month. Celebrate this delicious and nutritious dish by making your own soup from scratch in your Lance Camper. Don’t have a recipe? Try one of these.

Creamy Potato Soup

  • 6 slices bacon, chopped
  • 1 onion, chopped finely
  • 2 cans chicken broth
  • 2 cups water
  • 5 large potatoes, diced
  • ½ teaspoon salt
  • ½ teaspoon dill weed
  • ½ teaspoon ground white pepper
  • ½ cup all-purpose flour
  • 2 cups cream
  • 1 can evaporated milk

Cook the bacon and onion together in a large skillet over medium-high heat until browned. Drain the excess grease and put this into your slow cooker. Stir in the water, chicken broth, dill weed, potatoes, salt and pepper. Cover and cook on low heat for six hours. Stir occasionally. Whisk the flour and cream together and add to the soup. Also stir in the evaporated milk. Cover and cook an additional 30 minutes.

Southwest Chicken Soup

  • 1 pound chicken, cooked
  • 3 cans black beans, drained and rinsed
  • 2 cans chicken broth
  • 2 cans Rotel
  • 1 can corn
  • ½ onion, chopped
  • ½ cup jalapenos, chopped
  • 2 garlic cloves, chopped
  • 2 ½ teaspoons chili powder
  • 2 teaspoons red pepper flakes
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • ½ cup sour cream

In your slow cooker, add all of the above ingredients and stir well together. Cook this on low for about eight hours. Serve with a dollop of sour cream and enjoy. If you are in a hurry for this delicious soup, you can also cook this on high for about four hours.
