Sides for Your Holiday Celebration 

Holiday celebrations always include plenty of food, drinks, friends and family. However, the stress of preparing a lavish meal for all of the ones you love can be overwhelming. These two quick, easy and delicious holiday sides will help you serve a delicious meal while saving time and eliminating stress.

Mashed Potatoes with Butternut Squash

What you'll need:

  • 1 butternut squash (3 pounds, peeled, seeded and sliced)
  • Kosher salt
  • 1 1/2 tablespoons vegetable oil
  • 4 garlic cloves
  • 3 pounds Yukon Gold potatoes (peeled and quartered)
  • 1 cup half-and-half
  • 1 1/2 sticks unsalted butter

Cooking instructions:

  1. Preheat oven to 400 degrees.
  2. Toss squash with salt and oil in a large bowl.
  3. Spread squash on a non-stick baking sheet. Roast for 25 minutes, turning once.
  4. Puree squash until smooth.
  5. Bring the potatoes to a boil in a large pot with the garlic cloves. Simmer over medium heat until tender.
  6. Drain potatoes and garlic. Stir half-and-half and butter into the pot until the butter has melted. Remove potatoes from heat.
  7. Press potatoes and garlic thoroughly. Stir butternut squash into the potatoes and cook the entire combination over medium heat until hot. Serve immediately.

Green Bean and Blood Orange Salad

What you'll need:

  • 2 pounds green beans
  • 1/4 cup plus 2 tablespoons balsamic vinegar
  • 6 large blood oranges
  • 1 tablespoon honey

Preparation Instructions:

  1. Boil a large pot of salted water and fill a large bowl with ice water.
  2. Cook beans until bright green in the boiling water (5 minutes). Drain them and immediately plunge them into the ice water. Drain again and dry.
  3. Peel four of the oranges and cut them into sections. Zest one remaining orange and juice both. Pour the juice into a saucepan with vinegar and honey.
  4. Bring to a boil, then simmer the juice over medium heat. Reduce until syrupy (10 minutes).
  5. Place the beans and oranges on a platter and drizzle with the syrup. Add zest to garnish.
